Abstract

CV. Cindy Group Indonesia is one of the MSMEs that process Pindang Fish fishery products in Bogor City with domestic distribution channels. Some of the increased production and achievements that have been obtained by MSMEs make it feasible to know the management of their business implementation. The study was conducted to determine the techniques and stages of processing, operational waste handling techniques, organoleptic tests and public perceptions. The research used the method of observation, interviews and active participation. The results showed that the stages of the spinning process at CV Cindy Group Indonesia consisted of cleavage, soaking, seasoning, cooking, draining and packing. The waste management system contained in CV. Cindy Group is divided into two, namely solid waste management and liquid waste management. CV Cindy Group Indonesia's hygienic Pindang fish products are in demand by the public. very tasty, savory, and the texture is dense, compact, flexible and not slimy.
